Mustard Chicken Thighs
Everyone has their favorite go-to recipes when it comes to getting back on track and eating whatever your regimen calls for. One of my very favorites (I seriously eat it 2-4 days a week) is mustard chicken! As I say to all my guests when I make it… I know it sounds funny putting yellow mustard on your chicken but seriously when it cooks it has the best flavor! My current preference is pasture raised chicken thighs, I can’t get enough of them! But this recipe tastes amazing on a whole chicken, chicken breasts and ground chicken or ground turkey. It keeps the ground meats more fresh for a couple days following your prep! You can keep it simple and just marinate your poultry in plain yellow mustard or you can follow the recipe below!
Here’s what you need: (For approx. 8 chicken thighs)
• 1/3 cup of mustard
• 2 teaspoons of smoked paprika (I love it smokey)
• 4 sprigs of thyme (optional)
• touch of garlic powder (I am not a garlic person but a couple of my friends love it with the garlic powder)
I always start by adding the mustard to a little sauce bowl then I add the smoked paprika- I mix the two together and then add it to a mixing bowl with the chicken. I use a spoon to spread the mustard all over the chicken then lastly I add in the thyme. You can let this marinate for 5 minutes or as long as you would like. If you love salt like I do, I would discourage you adding any to the marinade as it tends to dry out the poultry. I switch it up with the cooking method. Sometimes I throw it on the grill and I cook it at a medium temperature about 5-6 minutes a side. Lately I have been sautéing mine; with the La Creuset square grill pan it fits 8 perfectly I just spray the pan with some avocado oil and cook for about 5-7 minutes each side or until thoroughly cooked!
