Herb Roasted Nuts

One of my favorite snacks all year round are these delicious herb roasted nuts! Not only are they a great snack but you can package them up super cute and give them as hostess gifts, teacher gifts and of course you will want to give one to yourself! They’re super easy to make and my favorite when they are first out of the oven!
Herb Roasted Nuts
Makes: 15 Servings, about ¼ cup each
Ingredients:
2 cups almonds
2 cups pecans
1 cup cashews
1 cup chopped brazil nuts
1/3 cup maple syrup
pinch cayenne
2 Tbsp coconut oil
1 Tbsp each: chopped fresh rosemary, basil, thyme
Generous pinch of sea salt
Directions:
Preheat oven to 300 degrees F. Mix nuts and set aside. In a separate bowl mix maple syrup, cayenne, coconut oil and herbs. Stir in nuts and ensure all are equally coated. Spread on unbleached parchment paper over baking sheet and sprinkle with sea salt. Place baking pan at center of preheated oven, bake for 15 minutes. Then move baking sheet to top rack of oven and bake an additional additional 10 min at top rack until liquid evaporates. Cool and store air-tight in mason jars. Consider filling jars and giving as a gift with ribbon.
